- En una olla poner a hervir el agua, con la rama de canela, los clavos de olor, la cáscara de naranja y la sal. Cuando rompa el hervor, incorporar el arroz y ponerle tapa a la olla y cocinar a fuego lento. Luego retirar la rama de canela y los clavos de olor.
- Añadir la leche y el azúcar, moviendo constantemente hasta que tome punto. Agregar la vainilla (Esencia), el coco rallado si hemos decido usarlo, mezclar. Echar las pasas y mover.
- Espolvorear la canela molida y servir en una dulcera grande de vidrio o en porciones individuales en pocillos.
