- Primero que nada lavar muy bien las pasas, luego colocarlas sobre un colador y dejar que escurran toda el agua. Si desean sabor en las pasas pueden remojarlas una noche antes en licor, si es pisco mejor aún. Picar las pecanas en trozos y conservar.
- Lavar el arroz, ponerlo en remojo hasta que se noten una especie de quiños y puedan notar que es fácil de quebrar, (aproximadamente unos 10 a 15 minutos mientras hierve el agua)
- Endulzar el agua con el 1/2 kilo de azúcar, la idea es que el agua este muy dulce, casi empalagosa. Añadir canela y dejar hervir.
- Una vez que el agua rompa hervor, separar más o menos la cantidad de 4 tazas medidoras. Añadir el arroz y mover constantemente con una cuchara de madera, tapar y dejar que se cocine el arroz.
- Cuando noten que el arroz esta suave, subir el volumen de la candela y no dejar de mover, ahora que el arroz ya esta cocinado debemos esperar a que hinche y doble su volumen. Añadir poco a poco las 4 tazas de agua que hemos reservado.
- Cuando noten que el arroz dobla su volumen y esta secando, agregar la leche y seguir moviendo, siempre con cuchara de madera. Mover unos 3 o 4 minutos y luego agregar la leche condensada, seguir moviendo con la cuchara y finalmente agregar la escencia de vainilla al gusto, por ejemplo yo le agrego una cucharadita y apagar.
- Yo agrego las pecanas a la preparación, y dejo las pasas al gusto. Si desean pueden agregar la ralladura de limón, pero yo lo recomiendo cuando lo van a comer al instante, yo lo preparo y lo guardo en la refri y obviar el ingrediente. Servir frio o caliente.
- La cantidad de agua puede variar, si hacemos la preparación en una cocina industrial les sugiero usar dos tazas menos de agua.
