La sopa azteca o sopa de tortilla, es un platillo mexicano elaborado a partir de tiras de tortilla frita a la juliana o totopos, que se sumergen en un caldo de jitomates molidos con ajo y cebolla, chile pasilla y se le añade crema, aguacate, queso y crema.

  1. 1 litro caldo de pollo (No es necesario el pollo)
  2. 1/4 kg tortilla de maíz, una bolsa de tiras de tortilla a la juliana o totopos
  3. 500 gr jitomates rojos
  4. 1 manojo epazote
  5. 1 pza cebolla blanca
  6. 2 dientes ajo
  7. 2 cucharadas sal
  8. 1 cucharada caldo de pollo en polvo o knorr suiza
  9. 1 pza chile ancho desvenado
  10. 3 pzas chiles pasillas desvenados
  11. 1 Pizca Orégano
  12. 1 Pizca Tomillo
  13. 1 Puño Chicharrón (Opcional)
  14. cantidad necesaria Aceite de cocina

Steps to make to make Sopa Azteca / Sopa de Tortilla

  1. Cocer en una olla con agua caliente a fuego medio el pollo con un poco de sal, 1/2 cebolla, 1 diente de ajo, 1 pizca de tomillo, 1 pizca de orégano y laurel, usar solamente el caldo.

    En mi caso usé el pollo para un platillo, el resto lo sazoné con las especias anteriormente mencionadas.
  2. Colocar en otra olla el chile ancho y dos chiles pasillas previamente desvenados, a fuego alto por 10 minutos hasta que estén hidratados, estarán listos cuando el agua se tiña de un tono rojizo oscuro.
    Dejar un chile pasilla sin hervir ya que este de freirá.
  3. Licuar todo el jitomate, la cebolla, los ajos y los 3 chiles hidratados.
  4. Colocar en una olla media cucharada de aceite a fuego bajo y colar la salsa licuada.
  5. Una vez colada, coloca una cucharada de sal y una cucharada de caldo de pollo en polvo, dejar a fuego medio por 10 y 15 minutos.
  6. Añadir un litro de caldo de pollo y la rama de epazote, dejar el fuego a medio durante 20 minutos.
  7. Una vez mezclados los ingredientes, cortamos el chile pasilla en pequeñas tiras, calentar un sartén a fuego alto 1/2 cucharada de aceite.
  8. Colocar brevemente las tiras de chile con precaución a que no se queme y retirar inmediatamente.
  9. Cortar las tortillas de harina en pequeñas tiras y freírlas durante un rato, usar la cantidad necesaria para llenar un plato hondo por persona. En mi caso compré totopos para facilitar el proceso, coloca la sopa o la salsa encima de ellas hasta llenar el plato.
  10. Añade queso panela, un poco de chile pasilla frito, aguacate, crema y opcional chicharrón.
  11. ¡Disfruta!
