- Lavar bien la carne (pollo, cabeza y espinazo) y poner en una olla grande con suficiente agua junto con la cebolla entera (cortar en cruz en el rabo), la cabeza de ajo completa sin pelar, sal, pimienta, el laurel y el epazote, y hervir por al menos 1.5 a 2 horas a fuego medio.
- En otra olla grande poner el maíz precocido (previamente lavado) a hervir por al menos 2 hrs. Salpimentar casi al final de la cocción ya que el maíz haya reventado y el agua se torne algo blanca. Recomiendo poner un par de piezas del cerdo para dar sabor al maíz. Poner la manteca de cerdo.
- Cortar rábanos, cebolla, lechuga, limones y reservar
- Para la salsa coloradita, quitar las semillas y venas de los chiles e hidratar por unos 30 minutos en agua. Poner media cebolla en pedazos y 3 dientes de ajo. Salpimentar.
- Una vez hidratados los chiles, licuar todo junto con una taza y media aproximadamente del mismo jugo donde hervimos los chiles hasta lograr el tono coloradito.
- Colar la salsa en una sartén previamente caliente con un poco de aceite de maíz o canola hasta que reduzca un poco.
- Verter el maíz cocido en la olla de la carne junto con la salsa coloradita y calentar unos 25 minutos hasta integrar todo. Poner más sal al gusto hasta lograr el sabor justo a cada paladar.
- Servir bien caliente con lechuga, rábano, cebolla, orégano al gusto, limón y salsa picante al gusto. Acompañar con tostadas. ¡Bon appetit!
