- Chorro mezcal o tequila
- Si se desea aromatizar la salsa agregamos hojas de aguacate asadas

- Limpiamos las hojas de chaya o de hierba santa, las embarramos de la masa, en el centro ponemos escamoles y doblamos la hoja en cuadro, embarramos por la parte de la nervadura. Vamos acomodando los tamales en la vaporera o una olla honda con sucama de ramitas de aguacate con hojas, tapamos y ponemos a cocer de una a dos horas a fuego medio. Se puede usar hojas de elote remojada para hacer los tamalitos.
- PARA LA SALSA : 3 chile guajillo, 3 anchos, 3 pasillas y 3 ahumados asados con todo y semillas remojados con agua de piloncillo y vinagre yo uso mil para los camotes o calabaza, 7 dientes de ajo, pizca de : comino, ajonjolí y amaranto asados, sal de mar y caldo de jumil. Se muele todo muy bien y se pone en una salera, para servir se le pone un chorro de mezcal o tequila. Con esta salsa se acompañan los tamales yo los hago chiquitos. Si deseamos perfumar la sala agregar hojas de aguacate asadas.
