El pozole es un guiso que corresponde a la cultura del maíz, en México, se come desde la costa hasta el altiplano y de frontera a frontera, tiene su origen en el caldo molido “Pozotl” que los indígenas hacían mezclando el maíz (Cacahuazintle) con agua.

- Poner a hervir el maíz, con un poco de cal para posteriormente quitarle la cáscara y cabeza del mismo
- Una vez una vez hervidoo el maíz lo tendrás que cambiar de recipiente para lavarlo quitarle la cáscara y la cabeza
- Debemos también empezar a limpiar y desvenar el chile guajlo y dejarlo remojar aproximadamente 30 minutos para después molerlo
- En un traste aparte lavaras y cortas la carne en pequeños trozos
- Una vez limpio el maíz se pondrá a cocer en una olla con agua aproximadamente 10 litros, le agregamos sal, hierba a olor, como el tomillo y orégano.
- Una hora después de ponerlo a cocer se agregara la carne
- A continuación procederemos a limpiar la cabeza de ajo, la cual se molera en la licuadora, junto con la cebolla, comino, pimienta, clavo junto con el chille guajillo y lo colaremos para evitar que no se pase la cáscara de chile, ni el residuo de especias que suele quedar
- Lo agregamos al maíz, y esperamos a que esté listo
- Para el acompañamiento cortaremos la : lechuga, las cebollas y los rábanos
- Después freírlas la tortilla para obtener tostadas.
